This rare Caturron variety, unknown outside Colombia’s Acevedo region, is making waves with its complex layers of tropical and berry-like flavors, and silky, full-bodied mouthfeel.
Colombian producers like Alirio Rodriguez are keen to adopt the highly sought-after varietal because it allows them to experiment with unique processing methods they're renowned for. Meticulously handling the cherries, Alirio uses anaerobic fermentation to further pronounce the vibrant flavours.
We love this perfectly balanced brew and so will you, as a filter or a perfectly dialled in espresso.

This delicious anaerobic natural is a testament to why we love coffees from Colombia's Huila region. It opens with a vibrant and juicy acidity, featuring ripe cherry and mango offering a bold, tropical sweetness.
As you keep sipping, layers of peach and raspberry notes emerge, lending a balanced complexity of tart and sweet flavors. The silky finish lingers with hints of stone fruit and delicate berry undertones that highlight the coffee's exquisite harmony of bright acidity and smooth, rounded sweetness.
It’s exciting to watch new varietals pop up as producers tirelessly work towards improving the coffee quality. This rare variety is rumored to have emerged from an experimental research farm somewhere in Huila. Named Caturron, which translates to “big caturra”, the test was finished, but the improved plant stayed.
Caturron produces larger cherries and higher yields than traditional Caturra plants, which appeals to farmers looking for both quality and productivity. The larger cherry size also contributes to a richer and more concentrated flavor profile in the cup. Colombian producers are definitely not mucking around, and Alirio is no exception - each new harvest is a level up from the last.
Alirio Rodriguez has 30 years of coffee growing experience under his belt. The cherries get the royal treatment at his farm Finca El Recreo to draw out the incredible flavors of this rare variety.
Once harvested, Alirio ferments the cherry anaerobically in sealed plastic bags for 100 to 120 hours. Then he lays it on raised beds to dry for 15 to 20 days. Alirio’s next steps lead to investing in a mechanical dryer that would make drying even more consistent and controllable.
