El Diamante is an exceptional single-origin bringing Peru back on our menu. This refined washed coffee is produced by José Elmer, a third generation grower who has selected the finest Red Bourbon cherries for the microlot. Coffees from the Cajamarca region are known to be sweet and fruity, with exceptionally clean flavours.
This cup offers a perfect fusion of smooth notes of milk chocolate balanced out with the crisp apple and tropical fruits sweetness, finishing with the oh-so-smooth caramel mouthfeel. It’ll be great as a strong black coffee and with milk.

This Red Bourbon grows in shady, high elevated areas of José’s 3 hectare farm El Diamante producing coffee varietals such as Caturra, Catuai, Castillo, Gesha, and Maragogype.
It’s one of the few areas in Jaén with protected forests with rich ecosystems with native plants and animals and exceptional soil. At 1,800 meters above sea level, the beans are forced to ‘fight’ to grow, producing more sugars and nutrients which results in a more flavoursome cup.
Peruvian coffee has a light body, light to medium acidity, and deep color. Harvested with strict ripeness criteria, the cherries are floated and hand-sorted to ensure only the best make it through. Afterward, the coffee is washed and laid out to dry on patios.
